220 BPM is a gourmet restaurant conceived by chef Jérémy Galvan, who invites you to break with convention: there are no tables, cutlery has disappeared, water is served in unusual bottles, and it is no longer possible to distinguish the chefs from the waiters, because here, all the usual norms have been turned upside down.

Surrounded by a dense, wild forest, which is both a source of inspiration and raw ingredients for the kitchen, 220 BPM welcomes you into its dreamlike dining room, like a cocoon. 220 BPM has 14 seats per service for a cozy, intimate atmosphere. The chef and his team welcome you on Tuesday, Wednesday, Friday, and Saturday evenings, by reservation only.

Since setting up shop on Rue du Bœuf in 2011, this Michelin-starred chef from Lyon has continued to assert his unique identity: free, curious, and unbound by convention. His latest experiment, a total letting go orchestrated in 2020 at his eponymous restaurant in Old Lyon, was already an embryonic version of his current culinary immersion at 220 BPM.

Today, he uncompromisingly follows his heart, going further in his emotions and his relationship with life. He no longer seeks only to nourish, but to bring out primal emotions, to explore and question the known.

His approach is a proposal to take a different look at gastronomy and change the prism through which we view and experience dining in a restaurant: a moment that is at once artistic, human, and deeply personal.

The Genesis of 220bpm

The project was born out of the chef’s deep connection to nature, his region, and the land. A staunch locavore, he sources all his products from within a maximum radius of 250 km, the furthest being Lake Geneva. He is attached to our surrounding forests, and his cuisine is both a tribute to and a reflection of them. In his restaurant in Vieux Lyon, which closed permanently in June 2024, he already accompanied his guests on a journey to connect with their personal emotions through an immersion of taste, sound, and light, designed around the four elements and the five senses. He is already thinking about going further and wants to completely rethink “La Table” in the literal sense, spending three years of creativity building this crazy project: the outfits are designed like the clothes of modern-day hunter-gatherers, the chairs are custom-made like living, moving cocoons, the bark walls are like breathing trees, and the culinary creations are at the heart of life itself.

In early 2024, he met Rachel Benali, a globetrotter with many facets and passionate careers: a multidisciplinary artist in cities such as New York, Seoul, and Marrakech, founder and promoter of the Kbeauty brand Ökulte, and creativity coach at EM Business School Paris. 220 BPM took its final turn in the direction of artistry.

The images are cinematic, the music is electronic and avant-garde, the service scenarios, the sound and lighting design are conceived as a performance. The “on stage and off stage” alliance of these two disruptors characterizes the DNA of this place, designed like a cinematic work with its hook, its first act, its narrative pivot, and the famous climax—here, 220 beats per minute—followed by the dénouement. Customers are the heroes of their own story, and the team guides them with kindness and storytelling.
